Chicken liver parfait with fig chutney

Starters
Warm salad of wood pigeon with crispy bacon and black pudding

Fish
Fillet of brill with beurre rouge and roasted fennel
Goose Island IPA (USA)

Main
Pavé of wild fallow deer with potato purée and a sauce poivrade  served with
vegetables of the day from our own garden
Worthington White Shield

Chocolate brownie with salted butter caramel
Liefmans Kriek cherry

Raspberry soufflé
Floris passion fruit beer; or Aventinus wheat – ripe banana
